Dum Aloo (spicy Potato Curry)

Dum aloo is a vegetarian side dish recipe, which is cooked in rich combination of onion and ginger- garlic. It is one of the easy to cook and all season recipe. Just like many other Indian recipes, you can get variety in Dum aloo recipe. For example in bengal. it is less spicy whereas in North India, it has strong flavours of Garam Masala. In Gujrat, jaggery is added to make it a little sweet and in North Eastern states like Assam, nagaland and Manipur, A special type of chili is added to make it spicy and hot. Here is the north Indian variety.

Ubla aloo (boiled potatoes) 8 pieces (small size)
Onion paste 2 tablespoon
Ginger- garlic paste 1 tablespoon
Garam masala powder ¼ tablespoon
Roasted Cumin powder ½ tablespoon
Dum aloo masala 1tablespoon
Red chilli powder ½ tablespoon
Tomatoes 1 (chopped)
Green coriander leaves 2 tablespoon (chopped)
Refined / mustard oil 5 tablespoon
Salt 1 tablespoon
Sugar ¼ tablespoon
Heat oil in a karahi and add boiled poatatoes and sugar Fry the poatatoes till they become golden brown. Take them out and keep aside.
In the remaining oil add onion and ginger garlic paste. Sauté for 2 mintues and then add roasted cumin powder, red chilli powder and aloo dum powder. Sauté for another 2 mintues.
Then add tomatoes, salt and ½ cup of water. Add the fried potatoes and mix well. Cook on low flame for 5-6 mintues. Add green coriander and garam masala powder. Stir well and serve hot with rice or chappati.
