Easy Potato Fry
Easy Potato Fry is my all time favorite one..My mom used to prepare this for my lunch during my school days ..this is a great side dish for curd rice & even goes well with lemon rice / coconut rice..
Big sized Potatoes -2
Chilly powder -2 tsp
Turmeric powder-1/4 tsp
Salt -to taste
Garlic - 4 crushed
Mustard seeds -1 tsp
Urad dhal-1/2 tsp
Curry leaves -few
Onion-1 small chopped finally
Oil -2 tbsp
First cut Potatoes into fine pieces with skin. Heat the pan, add oil then add mustard seeds & urad dhal when it starts to splutter add curry leaves and onions. Saute till onion turns golden in colour.
Now add fine pieces of potato into it.Then add turmeric powder + chilly powder Saute well. Don't add salt before because the potato will shrink.
Allow it to cook in oil itself, nearly it will take 8 to 10 mins. The flame must be low to avoid burning.
While sauteing add crushed garlic into it. once the potatoes are cooked add salt as per your taste. serve with curd rice/sambar rice.
You can adjust chili powder according to your taste.
