Ethaykka Bonda (ripe Banana Bonda)

It's a sweet tea-time snack. My sister loves banana in any form and so my mother used to try different variety dishes of banana. This recipe is handed down to me from my mother. It's sweet, crispy and stomach filling snack and is commonly available in local tea shops in Kerala.

Ripe bananas- 2
All purpose flour- 1 cup
Cardamom powder- 1/4 tsp
Sugar- 5 tbsp
Coconut oil- as needed
Peel off the bananas and mash well using hand
Add sugar, cardamom powder and all purpose flour and mix well using hand
Heat coconut oil in a heavy bottomed pan
When the oil gets heated, take a handful of dough and drop into the oil as small balls.
When one side turns golden brown in colour, flip the bonda to the other side and fry well.
When both sides are fried well, remove it from oil and spread to a paper towel.
Serve hot with tea.
