Firni (indian Milk And Rice Pudding)

Yummy rice pudding

1tbl spoon rice ( soaked in water for 15-20 min)
sugar as per taste
500ml milk
dry nuts (finely chopped)
rose water(optional)
cardamom powder
saffron (if required)
Grind the soaked rice into fine smooth paste.
Boil the milk and as the milk comes to the boiling point add the rice paste into it by continuously stirring so that no lumps should be formed.
Boil the milk for about 10-12 mintues.
As it reaches the required consistenc,y switch off the flame and now add sugar, dry fruits and cardamom powder
Mix rose water and saffron.
Now pour the mixture into the bowl in which you have to let it set.
Now let the mixture cool in fridge for 1-2 hrs.
Serve it chilled after garnishing with some crushed nuts and cherry.
For setting this pudding one can use small bowls made from mud. in north they are named as kullad.
