Gajar Aur Lauki Ki Barfi (carrot And Bottlegourd Barfi)

Desserts are must on Diwali but many people avoid it because of high calorie. Here is one simple home made dessert recipe which has goodness of carrots and bottlegourd. .

Gajar ( Carrots) - 2 cup grated Finely
Bottle gourd – 1 cup grated finely
Coconut – ½ cup grated Finely
Sugar – 1 cup
Cardamom powder – ½ teaspoon
Milk – 1 cup
Ghee – 4 tablespoons
Squeeze the excess water from the grated bottlegourd and keep aside.
Heat ghee in a pan and add the grated carrots, bottlegourd and coconut.
Saute over medium heat for 5-6 mintues.
Add milk, sugar and cardamom powder and mix.
Increase the flame and cook till all the milk is absorbed and the mixture start leaving the sides of the pan.
Grease a plate and pour the mixture over it.
Keep it to refrigerate for 20 mintues. Cut the barfi into desired shape and again refrigerate for 30 mintues or till it takes its shape
