Gajar Ka Halwa (sweet Carrot Pudding)

A simple yet irresistible Gajar halwa recipe.

4 Cups Grated carrots
6 Chopped Pistachios
15 Raisins
4 +1 Tbsp Ghee (Pure ghee)
2 pinches of cardamom powder
3&1/2 Cups Milk
1 Cup Sugar (Add more for more sweetness)
1 Cup grated Khoya
Peel and grate the carrots (Use a thick grater and not a very fine one to keep the carrot texture intact after cooking)
Heat 4 Tbsp ghee (reserving the 1 tbsp for later) add raisins, and chopped almonds, quickly fry them for a few seconds till and remove from heat. Keep aside
Add the grated carrots to the ghee and saute for 5 to 10 minutes on medium heat
Now add milk, cardamom powder and let the carrots cook in milk for 15-20 minutes or till the milk and evaporated and carrots are softened (may take up to 45 minutes)
Stir in the sugar and grated khoya cook for 10 minutes more stirring continuously. Turn of the heat add the remaining 1 tbsp ghee and mix
Garnish with raisins and pistachios
Serve Hot or cold
You may use condensed milk if khoya is not available
