Gajar Matar Sabzi (stir Fried Carrots And Peas)

Stir fried vegetables make an important part of the vegetarian Indian platter. This recipe of carrots and peas is one such flavourful and nutrition packed recipe. If you are a fan of savoury, tangy, sweet and spicy recipes, this one is for you. The addition of kasoori methi ( dried, lightly roasted and powdered fenugreek leaves) makes it particularly aromatic and the tanginess from the tomato make it a favourite of the young and old.

Ingredients: 
1 cup chopped carrots
1 cup peas
1 chopped tomato
1 tbsp oil
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp chilli powder
Salt to taste
1 tsp kasoori methi
Directions: 
Heat the oil in a pan.
Add mustard seeds to the oil and allow crackling.
Add turmeric powder and chilli powder.
Add tomato and sauté.
Add carrots and peas and mix well.
Add salt and stir.
Add two tbsp water, cover the pan and simmer for 7 minutes. Add more water if required.
Uncover the pan, stir and check to see if done.
Add kasoori methi and give a final stir.
Serve hot.
