Gathia Aur Papite Ka Laccha (gramflour Fried Snack With Papaya Salad)
Gathia aur papita ka laccha is a snack recipe from Rajasthan. It is usually served with tea. The most amazing thing about this recipe is that although it is fried but as it is complimented with raw papaya laccha, It is easily digestible.
Besan (Gramflour) - 1 cup
Baking powder - 1/4 tablespoon
Kala zeera (nigella / onion seeds) - 1/2 tablespoon
Ajwain (carom seeds) - 1/4 tablespoon
Salt - 1/2 tablespoon
Turmeric powder - 1/4 tablespoon
Oil for frying
(For Papite ka laccha)
Papita (Raw papaya) -1
Whole green chilli - 5-6 pieces
Rai - 1/4 tablespoon
Salt - 1/4 tablespoon
To make gathia, first take a large bowl nad add besan, 2-3 tablespoon oil, salt, turmeric powder, kala jeera, ajwain and baking soda and mix. Now add required amount of water and make smooth dough. Keep it for an hour.
After an hour take small portions from the dough and roll it over a rolling spin. Now with a knife cut thin verticle strips of the gathia and keep aside.
Heat oil in a karahi and slowly add the gathis strips. Fry on low heat. Your gathia is ready.
For papite ka laccha, grate the raw papaya and keep aside.
Heat a tablespoon of oil and put rai, green chili and grated papaya. mix salt and cover the pan with a lid. Cook for 10 mintues until the papya is almost done. Serve with Gathia.
Gathia can be stored in air tight containers for two weeks.
