Gobi Manchurian (cauliflower Manchurian)

Gobi Manchurian is a popular Indo-Chinese preparation with cauliflower. Manchurian is a flavor that has conquered the hearts of the young and the old equally over the past 2 decades in India. This crazily sought after dish is so easy to make at home, that one need not bother buying it from a restaurant any more. Plus it's healthy when you do it at home and your loved ones deserve the best. Everyone has their version of manchurian, this is mine.

Ingredients: 
Cauliflower- 250 g
Onion- 1
Capsicum- 2
Garlic- 6-8 pods
Ginger- 1 inch piece
Green chilies- 4
Soy sauce- 2 tbsp
Tomato ketchup - 1 tbsp
Ginger-garlic paste- 2 tsp
Water- 1/4 cup
Oil- for frying
Salt- to taste
All purpose flour- 3 tbsp
Corn flour- 4 tbsp
Parsley- 1 sprig
Directions: 
Separate the cauliflower into florets. Wash and pat them dry.
Prepare a batter with the all purpose flour and 2 tbsp corn flour.
Marinate the cauliflower florets in ginger garlic paste and salt and set it aside for an hour.
After an hour dip these florets in the batter and deep fry them. Drain them on a paper towel.
Add a pinch of Kashmiri chili powder or artificial color if you want the cauliflower to look orange in color.
In a wok heat some oil. Now add the chopped garlic,ginger and green chilies.
Keep the flame high and toss the ingredients, do not let them brown. Add the onions now.
Keep tossing the onions should not cook too much. Add the capsicum.
Add the soy sauce and ketchup followed by salt. Stir using a spatula.
Add the cauliflower florets and toss them so that they blend well with the gravy.
Mix the remaining 2 tbsp corn flour with 1/4 cup warm water and add this to the manchurian.
See that you strain the corn flour mix before pouring it onto the manchurian so that there are no lumps in the gravy.
Bring the manchurian to a boil. The gravy would be thick.
Garnish with parsley and gobi manchurian is ready to be served.
Footnotes: 
Add a pinch of ajinomoto while adding soy sauce it imparts a special flavor. I omit this for health reasons.
