Hari Chutney Wali Baigan (brinjal Stuffed With Green Coriander Sauce)

It is a vegetarian side dish recipe. Brinjal is a good source of iron, magnesium and plan fibre. It is one of the easily digestible vegetable but many people, specially kids do not like to eat baigan. Here is a simple recipe that can turn a tasteless baigan into a tangy and spicy dish, that will be liked by everyone.

Baigan (Brinjal)- 250 grams ( small size )
Hara dhania (Coriander leaves) – 1 bunch.
Hari mirch (Green chillies) – 3 pieces
Hara lahsoon (Green garlic) – 2 strands
Khatai or dry mango powder – 1 tablespoon
Mustard oil - 4- 6 tablespoon.
Salt -1/ 2 tablespoon.
First wash the whole brinjal and then make a cut from one side to fill the stuffing.
For the stuffing take coriander leaves, green chilli, green garlic and khatai together and grind into a thick paste.
Fill the brinjals with the stuffing and keep aside for 10-15 mintues
Heat oil in a flat tawa and then cook the brinjals on low heat, until they become soft. Serve hot with plain rice or chappati.
