Healthy Bread And Soya Chunks Pulav

Bread Pulav is a yummy rice preparation with a plethora of vegetables, bread pieces and soya chunks. It is the traditional recipe and an all-time favuorite at our home. My mom prepares this every time we have a one day old bread at home. Why one day old bread? Well, a day old bread is dry and makes a perfect partner for rice and vegetables. The only add on companion to this dish is a traditional raita.

Ingredients: 
Brown Bread - 1 loaf (remove the crust and cut the bread slice into 4 pieces
Basmati Rice - 2 cups
soya chunks - 15 - 20 pieces
potato - 2
beans - 50 grams - cut length wise
carrot - 50 grams - cut length wise
olive oil - 7 to 8 spoons
onions - 2 big size - cut in small pieces
turmeric powder - 2 spoons
salt to taste
chilli powder - in accordance to your taste
sugar - a pinch
Milk - 2 1/4th cups
ginger & garlic paste - 2 big spoons
cinnamon - 3 to 4 pieces
clove - 5 to 6 pieces
cardamom - 5 to 6 pieces
black pepper - 7 to 8 pieces
star anise - 1 piece
Bay leaf - 3 to 4 leaves
muslin cloth - 1
kesar - pinch
dry red chillies - 2 - 3
green chilly - 2 slit length eise
mustard seeds - 1 table spoon
cumin seeds - 1 table spoon
cashew - 5 - 10 roasted
Directions: 
Shallow fry the bread slices in olive oil and keep aside. Add one spoon of olive oil in a kadai. Sprinkle a pinch of turmeric powder, chilli powder and salt. Cut the potato into round slices and fry until they are cooked. Open the lid after few minutes so that the potato slices do not stick to each other. Remove and Keep aside. for taste. Boil the soya chunks in low flame for 5 minutes. Add a pinch of sugar for taste. Boil the beans and carrot cut in long slices in low flame for 5 minutes. Add a pinch of salt. Drain the water. Take the kadai and add one spoon of olive oil. Fry the beans and carrot slices for 2 - 3 minutes. Remove and keep aside. Take the kadai and add one spoon of olive oil. Fry the onion pieces until they turn golden brown. Remove and keep aside. Mix all the ingredients well. Take a big vessel to cook 2 cups of basmati rice Add 3 cups of water and 1 cup of curd. Add ginger and garlic paste, 2 spoons of olive oil, salt to taste and a pinch of turmeric powder. Add chilli powder in accordance to your taste. Take a muslin cloth and add dalchini - 3-4 pieces, lavang - 5-6 pieces, elaichi - 5-6 pieces deseeded, black pepper - 7 to 8 pieces, star anise - 1, tej patta - 3-4 pieces. Tie the cloth into a bag and immerse this bag into the rice vessel. Cook rice on low flame. Mix a pinch of kesar in 1/4 cup of cold milk. START THE LAYERING Spread one layer of rice and another layer of all the ingredients. Sprinkle a spoon of kesar milk on each layer. Place the vessel and cook rice again for less than 2 minutes on low flame. Take a small kadai. Add 1 spoon of olive oil. Add 1 spoon of mustard seeds and cumin seeds. Once the seeds begin to splutter, add 2 - 3 dry chillies and slit green chillies. Pour this mixture on the rice mix once done. Add chopped coriander leaves for garnishing. Add the fried bread slices and cashew chunks before serving. Serve the bread and soya chunks pulav with Raita
Footnotes: 
Add the chillies as per taste. Remove the spice containing cloth bag before serving. Egg lovers can add boiled egg to this dish. Fried chicken pieces also go very well with this yummy rice dish. You can lessen the quantity of vegetables.
