Horseradish Salmon Burgers
A juicy, flavor-packed salmon burger stuffed with dill, onions, and horseradish, served with a sweet and creamy honey-dijon mayonnaise and avocado slices on toasted buns. It's cooked with just one skillet and finished in about 15 minutes.
Skinless Salmon Fillet - 1 pound
Scallions sliced - 2
Large Eggs - 2
Bread Crumbs - 1/3 Cup
Prepared Horseradish - 3 Tablespoons
Black Pepper and Kosher Salt
Olive Oil - 2 Tablespoons
Soft Buns - 4
Cup Mayonnaise - ½
In a food processor, pulse the salmon, eggs, bread crumbs, scallions, horseradish, ¼ teaspoon black pepper and ¾ teaspoon kosher salt until coarsely chopped; form into 4 patties. In a large nonstick skillet cook the patties in the oil over medium heat from 6 to 7 minutes per side until opaque throughout. Form sandwiches with the buns, lettuce, and mayonnaise. Serve with beet chips.
