In india food is incomplete without any Pickle..Mangoes are in season so made yummy instant Mango Pickle. it can stay up to 7 days without freeze at room temperature..Or in freeze for a month..But I bet u it will no longer more than 3 days..You will eat it paratha ,chapati, Rice, or khakhara..

3-4 green Raw Mango
4 tbsp fengurick seeds
1 tbsp kalonji
Salt to taste
2 tbsp or little more red chilli powder
1 tbsp crushed saunf
1 tbsp turmeric powder
1 tbsp or less dry Mango or anchor powder
1/4 cup mustard oil..
1 tbsp asafetida
1 cup water to boil fengurick seeds
First we wash and cut raw Mango in cubes..Remove seeds..Now boil fengurick seeds with 1 cup water till it fluffy ..Switch off the flame..Strain the water wash it with clean water and keep it aside..
Heat oil in a pan..When it's hot enough add asafetida add Kalonji (onion seeds).add saunf..Add chopped green raw mango add boiled fengurick seeds..
Add turmeric powder ,salt, kashmiri chilli powder..amchur powder .Mix well..Adjust spices as per your taste..Cover it cook it for 2 minutes or mango become soft.. Switch off the flame..Let it cool..Keep it in air tight container or jar..Tadaad instant Raw Mango pickle is ready..
Spices can adjust as pet taste..Use mustard oil for great taste..
