Kachori Sabji With Pumpkin Curry

A meal which can be eaten as breakfast or lunch .Its a whole some meal in itself only.Its one of the most preferred breakfast on Sundays.

Ingredients: 
For Pumpkin Curry:
1 1/2 cup of pumpkin cubes
1 1/2 cup of potato cubes
1/2 cup chopped onions
2-3 tbsp of oil
1 1/2 tbsp of grated ginger
1 1/2 tbsp of grated garlic
1 1/2 tbsp of grated green chillies
1/4 tbsp of Mustard seeds(Rai)
1/4 tbsp of Cumin seeds(Jeera)
1/4 tbsp of Fenugreek seeds(Methi dana)
1/4 tbsp of Onion seeds(Kalonji)
1 tbsp dried Fenugreek leaves(Kasoori Methi)
Salt-according to taste
1/2 tbsp Coriander powder(dhaniya powder)
1/4 tbsp of Turmeric(Haldi powder)
1/4 tbsp of Red Chili Powder
1/4 tbsp of Garam Masala Powder
2 pinches of Black pepper powder (Kali Mirch powder)
1/4 tbsp of Dried Mango powder(Amchur)
2 tbsp of Sugar
Handful of Coriander leaves(Dhaniya patta)-to Garnish
For Kachori:
2 cups of Maida(white flour)
1/2 cup of Semolina(Suji)
1/2 cup of Yogurt (Curd)
1/2 cup of Splitted Black Gram (Urad Dal)
Salt-according to taste
1 tbsp of Ghee/oil
Oil for deep frying
Directions: 
Soak the Black gram(urad dal) for some hours around 4 to 5hours.After that grind it and make a coarse paste of it.
Take a bowl,add in the Flour(maida),semolina,salt and mix it nicely.
Add the dal paste to the maida mixture and knead it into a dough by adding yogurt slowly slowly.
Add some ghee/oil and knead for some time till the dough absorbs all the ghee.
Cover the dough with a muslin cloth and let it rest for 30mins
For the curry,take a pressure cooker,add oil,now add the mustard seeds,cumin seeds,fenugreek seeds and onion seeds.once they start crackling add the grated ginger,garlic and green chilies followed by a pinch of kasoori methi leaves.Cook for some time
Add the onions and salt.cook the onions till it turns light brown in color.
Now add the potatoes and pumpkin followed by turmeric,red chili powder,coriander powder.Saute the Masala for some time.
Add some water to the masala.Once it starts boiling cover the lid and cook it for 3 to 4 whistles.Open the lid after sometime,add in the garam masala,sugar,amchur and kasoori methi.Mix it all nicely.
Mash some pieces of pumpkin and garnish it with fresh coriander leaves.cook for 2 mins till it simmer boils .The pumpkin Curry is ready
For the kachoris,roll out some small pooris by making small balls out of the dough.Deep fry them in hot oil.
Serve the hot pooris with the pumpkin curry.
