Kairichi Aamti (raw Mango Coconut Curry)

It is a traditional Konkani rice accompaniment. It is a sour, sweet and spicy curry delicacy which goes well with steamed rice.

Ingredients: 
1 big Raw Mango peeled and cut into 2 inch pieces.
1 big bowl of freshly grated Coconut
4 Red dried Chilies
1 tablespoon of Rice
½ teaspoon of Turmeric powder
2-3 tablespoon of Jaggery
1 tablespoon – Oil
½ teaspoon Mustard seeds
½ teaspoon Asafoetida
Salt to taste
Directions: 
Grind coconut, red chilies, rice and turmeric to a fine paste.
Heat a pan, add the oil, asafoetida and mustard seeds as temper.
Add the mango pieces and a glass of water. Cook it for 2-3 mintues.
Add the grounded paste, jaggery, salt and bring the curry to a boil. Keep the flame low and stir in between. Cook for 2 mintues.
Once the Mango is cooked well and turn soft, switch off the flame.
Serve hot with rice.
Footnotes: 
The quantity of Jaggery depends on the sourness of the mango.
Add water as per your consistency level.
