Kaju Ki Sabzi (cashew Curry)

Cashew is a very good source of good fat that helps to make our bones stronger. You can munch cashew to get your daily dose of good fat but if you do not like to then you can use it in making curry dishes. Cashew paste brings thickness and creaminess in any gravy. Here is a side dish recipe that has kaju as the main ingredient.

Kaju (cashew) – ½ bowl
Onion Paste – 1 onion
Ginger –garlic paste – 1 tablespoon
Posta (poppy seeds) – ½ tablespoon
Green chilli – 2 piece
Cardamom – 1 piece
Salt – ½ tablespoon
Refined oil - 4 tablespoon
Butter / Ghee – 1 tablespoon
Boil kaju for 10 mintues and then drain the excess water.
Make a paste of posto, 4-5 kaju, green chilli and cardamom and keep aside.
Heat oil in a pan and fry the boiled kaju till they turn light brown. Take them out and in the remaining oil put onion paste followed by ginger garlic paste. Fry on low heat till the masala leaves the oil.
Now add the poppy and cashew paste and fry for 2 mintues. Add fried cashew, salt and 1/2 cup of water. Mix well and put a lid on. Cook for 2-3 mintues. Garnish with sliced green chillies and serve with naan or pulao.
