Kakdi Chi Koshimbir (cucumber Salad For Fasting)

Kakdi Chi Koshimbir is a typical marathi salad. Its usually made as an accompaniment to the main dish. It’s a great Upwas recipe or fasting recipe. Easy to make and cool on stomach

Ingredients: 
1 Cucumber
1 Green chili chopped
3 tbsp coriander leaves
2 tbsp crushed roasted groundnuts
1 tbsp sugar
salt to taste
Directions: 
Peel and chop cucumber in medium sized pieces
Beat the curd well
Mix all ingredients in a bowl nicely
Garnish with some more coriander leaves
Serve cold as an accompaniment

If you want to preparte this koshimbir for everyone and not particularly for upwas, keep the chili aside.
