Kathal Ka Dopyaza ( Jackfruit Dopyaza)

Kathal ka dopyaza has evolved as a vegetarian substitute for Mutton Dopyaza. Infact kathal (Jackfruit) is considered as vegetarian Mutton.The cooking method and ingredients are more or less some.

Ingredients: 
Kathal (Jackfruit) 500 grams (18 ounce)
Onion 500 grams (18 ounce)
Whole red chili 3 pieces
Whole black pepper 5 grams
Whole Cumin 5 grams
Ginger ½ tablespoon (chopped)
Garlic ½ tablespoon(chopped)
Ginger -garlic paste 1 tablespoon
Whole Garam Masala 1 tablespoon (one can use powdered form also)
Tejpatta (bay leaf) 2 pieces
Turmeric ½ tablespoon
Mustard Oil 6 tablespoon
Salt 1 tablespoon
Water ½ cup
Directions: 
First peel and cut Kathal in 1 inch cubes. Put ther kathal in a pressure cooker and cook for 10 mintues till it become half tender. Cut onion and keep it aside.
In a karahi put 2 tablespoon of oil and fry the Kathal till golden brown and then keep it aside. Similary take 250 grams of onion and fry till golden brown and keep it aside.
In a karahi put rest of the oil. When oil become a little hot add tejpatta, Chillies, chopped ginger and garlic, cumin, black pepper, turmeric powder and whole garam masala and let it pop a little .
Now add 250 grams of chopped Onion and fry till it become golden brown.
Then add Ginger- garlic paste and fry it.
Finally add the kathal, the fried onions, salt and ½ cup of water and pressure cook it for 10 mintue. Kathal ka dopyaza is ready. Serve it with Paratha.
