Kathiawadi Khichdi (special Rajasthani Khichadi)
Katdiawad is place in Rajasthan. This recipe has originated from kathiawad and hence the name. It is basically a khichdi with rice and vegetables sans any lentil. The addition of vegetables makes it a wholesome meal.
Rice 150 grams (5.5 ounce washed and drained ½ hour before)
Spring onion 50 grams (2 ounce chopped)
Garlic 2 cloves (chopped)
Beans ½ cup(chopped)
Green peas ½ cup
Brinjal ½ cup(chopped)
Tomato ½ cup(chopped)
Curry leaves 8-10 leaves
Chilli powder ½ tablespoon
Hing (Asafoetida) 1 pinch
Salt 1 tablespoon
Gram masala powder 1/2 tablespoon
Turmeric powder 1/2 tablespoon
Mustard seeds ½ tablespoon
Cumin Seeds 1/2 tablespoon
Mustard oil 2 tablespoon
Ghee 3 tablespoon
Capsicum 1 cubed
In a karahi heat oil and Ghee together.
Add hing, curry leaves, mustard seeds and cumin seeds.
Once they start popping add green onion and fry till they turn light brown.
Then add chopped garlic, beans, peas, capsicum, brinjal, tomatoes and green chilies. Sauté for 2-3 minute.
Then add red chili powder, turmeric powder, garam masala and washed rice. Mix well.
Transfer the entire thing into a pressure cooker.
Add salt and 100 gram of water and cook up to a whistle.
Let it cool down and then open the lid. Serve hot with home made Curd.
I have added potatoes as my little one likes it. You may wish to add chopped potatoes or skip it.
