Kerala Brinjal Sambhar
Kerala Brinjal Sambhar is a tasty curry and is usually served with plain rice. It is a delicious recipe. We use to make this sambhar on festivals and Onam.
Toor dal- 1/2 kg
Onion- 2 pieces (sliced)
Tomato- 2 pieces (chopped)
Brinjal- 2 pieces (cut in small size)
Chilli powder - 1 table spoon
Turmeric powder - 1 table spoon
Coriander and curry leaves-Few
Green chilli- 3 pieces
Sambhar powder - 1 Table spoon
Hing- 1/4 table spoon
Oil - 1 table spoon
Put toor dal in a cooker and cook up to 20-30 minutes.
Open the lid and add Brinjal, tomato, green chilli, turmeric powder, chilli powder and coriander leaves. Bring it to boil.
Add salt and tamarind paste and put the lid on. Cook for two whistles.
Heat oil in a pan add mustard, red chilli, curry leaf, sambhar powder and hing and pour this mixture to sambhar.
Now sambhar is ready to serve.
We have to soak thuvar dal 5 hours before cooking
