Khumb Ka Pulao (mushroom Pulao)

A very simple and easy one pot meal made from mushrooms. These days with a 7 month old I struggle packing lunch for my hubby so I have started one pot meals. Pulaos are easy because all I need to do is prepare a raita as an accompaniment. This pulao was the highlight of the week.

Ingredients: 
Mushrooms- 200g
Basmati rice- 1 cup
Onion- 1
Minced ginger- 1 tsp
Minced garlic- 1 tsp
Green chilies- 2
Cinnamon- 2 inch stick
Cloves- 2
Green cardamom- 2
Turmeric powder- 1/2 tsp
Garam masala- 1/2 tsp
Salt- to taste
Oil- 2 tbsp
Cumin seeds-1/4 tsp
Bay leaf- 2
Water- 2 cups
Directions: 
Wash the rice and soak for 30 minutes. Meanwhile clean the mushrooms and slice them into medium size pieces.
Heat oil in a pan and add the cumin seeds when the oil is hot.
When the cumin seeds brown add the whole spices and saute for 2 minutes.
Now add the onions followed by minced ginger and garlic. When the onions are translucent add the chilies.
Add turmeric and garam masala powders and saute for 3-5 minutes.
Now add the mushrooms and salt and let the mushrooms cook for 3 minutes before adding the rice.
Add the water and pressure cook the rice up to 2 whistles.
Serve with raitha, pickle and papad.
