Kothu Parotta

Kothu Parotta is a popular South Indian recipe particulary in Tamil Nadu. This is a concoction of minced parotta/layered flat breads sauteed with onions, tomato, spices, eggs and with Veg or Non Veg Curry/Chalna. Addition of veg kurma /chicken gravy gives extra taste to this recipe. I had left over parottas in my home so my mom cooked this recipe. We didn't add eggs while making it, but chicken gravy compensated that taste.Here goes the recipe...

Ingredients: 
Parotta(fresh or frozen or left over)-4 no.s
Onion-1 big (thinly sliced)
Tomato-1 medium sized (chopped finely)
Ginger garlic paste-1 tsp
Green chilli-1 finely chopped
Mustard seeds-1/2 tsp
Fennel seeds-1/2 tsp
Coriander leaves-few
Chilli powder-1 tsp
Tumeric powder-1/4 tsp
Freshly ground pepper-1/2 tsp or to taste
Chicken gravy /vegetable kurma-1 ladle
Curry leaves-few
Oil-1 tbsp
Salt-to taste
Directions: 
Heat a tawa/griddle toast the parottas on both sides and allow to cool for a minute.
Then cut the parotta in to small pieces using kitchen scissor and keep aside. Heat oil in a wide pan and add mustard seeds & fennel seeds,allow to pop.
Add onions, curry leaves and green chillies, sprinkle little salt and saute well.Then add ginger-garlic paste and saute till the raw smell evades.
Now add chopped tomatoes and saute well and add dry powders and stir fry for a minute. And then add the parotta pieces and mix well.
Now add a ladle full of Chicken Curry or Vegetable Chalna and stir fry on medium high heat for 2 minutes. Finally add pepper powder & coriander leaves and give a quick stir.
Now kothu parotta is ready to serve. you can serve with raitha/any gravy.
Footnotes: 
Here I haven't use egg if u want to add, after adding parotta pieces move this pieces to the side of the pan, crack and pour the eggs. Scramble gently and let it cook for a minute. After that combine everything together, scrambled eggs-parotta and stir fry for a minute.
Adding chicken gravy/vegetable kurma are optional.It gives the real taste & flavor. But you can skip it.
If u want to make it as a vegan then simply skip eggs and chicken curry and stir the cut parotta with onion,tomato n spices and serve. Even you can add any vegetables of your choice.
