Kulcha (special Stuffed Bread)

Kulcha is a popular Indian bread . The dough is fermented and then it is stuffed with vegetables, usually aloo (potato) and spices and is cooked with ghee or oil. Due to fermentation of dough, it is very soft. Kulcha is usually served with Chole( chickpea curry) or mixed vegetables. Here is a simple recipe to make at home which does not require fermentation

(For stuffing)
Boiled aloo (potato) - 2 pieces
Onion -1 (chopped)
Green chilli - 2-3 pieces (chopped)
Turmeric powder - 1/4 tablespoon
Salt -1/4 tablespoon
(For Kulcha)
Maida (refined flour) - 1 cup
Refined oil - for frying
Kallonji (nigella seeds) - 1/4 tablespoon
Coriander leaves - 1 tablespoon
Curd - 2-3 tablespoon
To make stuffing, heat two tablespoon of oil in a pan.
Add onions and green chilli and sauté for 2-3 seconds.
Add mashed potatoes, turmeric powder and salt and mix well.
For kulcha, take maida in a bowl.
Add two tablespoon of oil and curd and mix well. Now add required amount of water and make dough.
Take small portions from the dough and make small balls. Stuff the potato filling and roll it over a rolling spin.
Heat tawa and place the kulcha. Sprinkle some kalonji and chopped coriander leaves over the surface and apply oil.
flip the kulcha and cook the other side also.
Serve masala kulcha with chole.
You may keep the dough for fermentation for an hour for softer kulchas
