Mango Firni (mango Flavoured Rice And Milk Dessert)

The best thing about firni is its creamy melt in mouth texture. The popularity of firni in India grew during the Mughal ages. With time just like Biriyani, firni also became part of Indian cuisine. Here I have added a fruity flavor to my Firni. I have used mango pulp to make mango Firni. You can add strawberries or pinnapMango - 1ples to get your desired flavor.

Mango - 1
Rice – 1 tablespoons
Milk – 1 cup
Cardamom powder – a pinch
Saffron – few strands
Dry Fruits – 2 tablespoons chopped
Sugar - 5-6 tablespooons depending upon sweetness of mango
Peel and chop the mango in pieces. Add little water and required sugar and make a smooth puree.
Make a fine paste of rice with very little water.
Heat the milk in a wide pan. Add rice paste and cardamom powder and let it boil. Put the gas low and cook for about 10 mintues by continuously stirring it.
After 10 mintues the paste will become thick. add saffron strands and required sugar and mix. Switch off the gas and let it cool a bit.
Heat the mango puree in another pan and cook for about 2 mintues. Switch off the gas and let it cool.
Once both the rice mixture and mango puree have cooled sufficiently, mix the two. Check the sugar level.
Garnish with chopped dry fruits and chill it for an hour.
Served chilled.
