Masala Rice Recipe

May a times I use left over rice from night before to prepare for my family. Rice is full of good carbs that give you energy to remain active through a long busy day

Ingredients: 
Cooked rice 2 cup
Onions- 1 big finely chopped
Tomato ketchup: 2 Tbsp
Tomatoes 1 chopped
Carrots chopped -1 (optional)
Peas - handful (optional)
Salt to taste
Sugar 1/4 tsp
Oil for cooking about 3 tbsp
Mustard seeds - 1/2 tsp
Directions: 
In a pan heat oil
Splutter mustard seeds. Add onions and pinch of salt and saute for 2 mins
Add in the carrots & peas and saute (this step is optional, I usually skip this during breakfast to make it quicker)
Add tomatoes, salt to taste, sugar and tomato ketchup mix well. Cover and cook for 3 mins on medium heat
Now stir in the cooked rice. (Please only use rice that has been refridgerated overnight)
Mix everything well
Cook covered for 5-6 min on low heat
Serve hot with pickle

Always use refridgerated rice only
