Masaledar Lasuni Aloo (potatoes Cooked With Spices & Garlic)

Potatoes chopped in cubes (medium): 4 pcs
Onion paste 1/2 cup
Tomatoes: 2 finely choppes
Jeera/cumin seeds: 1/2 tsp
Onion seeds: 1/2 tsp
Dry red chilies: 2pcs
Turmeric powder: 1/4 tsp
Salt to taste
Sugar : 1tsp
Garam masala 1 tsp
Fresh dhana jeera powder: 2 tsp
Fresh garlic paste: 1 tsp
Mustard oil: 3 tbsp
In a kadhai or deep pot heat oil
When hot, add cumin seeds, onion seeds, stir and allow to splutter
Add dry red chilies and finely onion paste. Be careful as onion paste splutters quickly
Give it a quick mix, add 3/4 tsp salt & cover using a lid. Allow the masala to cook for 2 mins
Open over and add turmeric, garlic paste, tomatoes and potatoes.
Cover and cook on low heat for 10 mins to let the onion paste and potatoes cook together
Open lid and add sugar, dhana jeera powder and garam masala. Cover again and let it cook for 10 mins on medium heat
Check seasoning and adjust salt. Finally cook on high flame (while stirring in between) till the potatoes are fully cooked
When done serve hot with puris, tandoori roti or plain chapatis
