Matar Mushroom Ki Sabji (mushroom And Peas Curry)

Matar Mushroom recipe is very well-liked Punjabi main-course recipe which is available in every Punjabi dhabas or restaurants. It’s a combination of two main ingredients mushrooms and green peas cooked in gravy of tomatoes and onions. It is healthy curry. As we are not adding cream to make it , so we don’t have to feel guilty to eat this delicious curry on everyday basis. You can serve this gravy with Indian breads like naan, paratha and pooris.

Ingredients: 
Mushroom - 2 Cups (fresh and chopped)
Onion – 3 pieces (chopped)
Tomato – 2 (chopped)
Peas – ½ cup (peeled)
Green chillies – 2 pieces (chopped)
Ginger and garlic Paste – ½ teaspoon
Black pepper & cloves – 4-5 pieces
Coriander powder - 1 teaspoon
Red chilli powder - 1/4 teaspoon
Turmeric - 1/2 teaspoon
Garam Masala - 1/2 teaspoon
Vegetable Oil - 5 tablespoon
Finally chopped coriander leaves for garnishing
Salt to taste
Water – 2 cups
Directions: 
Take pressure cooker; put 2 tablespoon of oil in it and when the oil is heated, add the chopped mushrooms and saute till it turns golden brown.
Take them out on a paper, so that it soaks extra oil.
Heat 3 tablespoon of oil in the same pressure cooker. Once hot, add black pepper & cloves, chopped onion, green chillies, ginger and garlic paste and sauté until golden brown.
Add all the dried powders (coriander powder, red chilli powder, and turmeric and garam masala) in it.
Fry for few minutes and then add tomatoes & peas in it and cover it with a plate, until it leaves oil.
Now add the fried mushroom and salt.
Stir and cook for 2-3 minutes.
Add water and stir well (adjust thickness).
Close the cooker and cook on high flame, wait for 2 whistles.
Now reduce the heat and cook on low flame for 10 minutes.
Open the cooker after all steam has escaped.
Garnish with garam masala and green coriander leaves.
Serve hot with with Rotis, Chapatis or Naans.
Footnotes: 
To give a unique flavor, you can add kasoori methi along with the masalas.
