Matar Pattice (pea Puff)

Matar pattice is my favourite snack from Monginis (a famous chain of fast foods in Kolkata). They make lovely matar pattice. One day I tried making it myself, although I could not make the puff as soft as they do, but the taste of the stuffing was same. Here I am sharing this awesome recipe which you can also make at home easily.

(For stuffing)
Matar (pea) – 1 cup
Green coriander leaves – 1 bunch
Garlic – 7-8 cloves
Green chillies – 2 pieces
Garam masala powder – ¼ tablespoon
Salt – ¼ tablespoon
Sugar –a pinch
Refined oil – 1 tablespoon
(For puff)
Maida (refined flour) – 1 cup
Salt – ¼ tablespoon
Refined oil – for frying.
For the stuffing first boil the green peas and keep them on a strainer to drain the excess water.
Make a paste of green coriander leaves, garlic and green chillies.
Take a spatula and mash the boiled peas.
Heat oil in a pan.
Pour the green masala paste and sauté for few seconds. It may stick to the pan so keep stirring.
Now add the mashed pea, garam masala, salt and sugar and fry till it leaves the side of the pan.
Put it down and let it cool.
To make puffs, take maida in a bowl, add salt and two-three tablespoon of oil and mix.
Now add required quantity of water and make dough.
Take small portions from this dough and roll it over a rolling spin.
Place a spoon full of pea mixture at one side and then fold it like a roll.
Stick the open sides with water. You can make puffs in any shape and size.
Heat oil in a pan and slowly fry each puff over a medium heat till it turns light brown.
Serve hot with tea or any chutney.
