Methi Tamatar (fresh Fenugreek With Tomato)

Methi Tamatar is a vegetarian side dish recipe. Methi leaves or fenugreek leaves are a good source of iron and calcium and help to maintain the blood sugar level but due to its bitter taste many do not like to have methi. To subtle down its bitterness it is advisable to blanch it in hot water. Methi is often cooked with lemon or tomato to kill its bitterness. Here is a simple methi tomato recipe.

Ingredients: 
Methi leaves - 1 bunch
Hing (asafetida) – 1 pinch
Cumin seeds – ¼ tablespoon
Rai (black mustard seeds) – ¼ tablespoon
Mustard oil – 2 tablespoon
Tomato – 1 large ( chopped0
Coriander powder – ½ tablespoon
Red chilli powder – ½ tablespoon
Turmeric powder – ½ tablespoon
Green pea - 1/4 cup
Salt – 1 tablespoon.
Directions: 
Chop methi leaves and blanch in hot water. Dain the excess water and keep it aside
Heat oil in a karahi and add hing, cumin seeds and rai. Once it srats popping up add chopped tomato, coriander powder, red chilli powder and turmeric powder.
Sauté till the masala is cooked. Add the methi leaves, green pea and salt and mix well.
Add 2-3 tablespoon of water and cook the saag on low heat for another 5-6 mintues. Serve hot with plain rice.
