Rhome Secret Recipe: Mithe Chawal Lajawab (sweet Flavoured Rice)

This dish was prepared ar Renaissance Mumbai on 8th May along with the Dahi Baigan
This is a traditional Oriya recipe which is considered as an auspicious offering to the Gods. It is a mandatory preparation for celebrations. Considering the goodness of pure ingredients nuts, kesar and ghee, this makes an excellent dinner accompaniment for special occasions. 1 cup Basmati rice
1/2 cup Sugar
2 Tbsp Ghee
Fistful of assorted Nuts and Raisins( Ghee roasted)
Small stick of Cinnamon
2-3 Cloves, Cardamom & whole Black Peppercorns
1 Bayleaf & few strands of Kesar (Saffron)
Fresh grated Coconut for dressing
2 cups Water
Pinch of Salt
Put the ghee in a heavy bottomed vessel and add the whole spices till they sputter and emit fragrance.
Add the rice and saute with the ghee for 5 minutes. Add water and salt and let it boil.
Once the rice is cooked 3/4ths, add the sugar and kesar strands and stir well. Add the ghee roasted nuts and raisins to the rice. Cover and cook till rice is done.
Garnish with fresh coconut and kesar strands and serve hot with sides as Dahi Baingan or any other curry.
