Mixed Pakoda Platter (indian Street Food)

My mums name is Nilanjana, she is my teacher in the kitchen. The best cook in the world. She makes this amazing pakora platter... Sharing her secret recipe

Onions finely sliced -2
Capsicum long sliced - 1
Potato thinly sliced - 1
Big green chillies - 4
Besan - 1/2 Cup
Ajwain > 1 Tsp
Rice flour > 1/2 Cup
Garlic paste > 1/2 tsp
Red chilli powder > 1/2 Tsp
Turmeric > 1/2 Tsp
Salt to Taste
Coriander 1/2 bunch finely chopped
Water >1 Cup
Oil for deep frying
Take both the flours and add all ingredients except the veggies and water, add salt to taste
Now add water and mix well. Consistency should be like cake batter- a little thicker will do
Heat oil for deep frying. My mother uses sunflower oil
When hot, slowly submerge one veggie (Capsicum, chillies and potato) at a time and deep fry for 2 mins on both sides till golden
Once these veggies are done, add lides onions in remaining batter and deep fry one spoonful at a time
Serve hot with sauce or green chutney
You may also use other vegetables like cabbage and egg plant
