Mixed Sprouts & Veggie Salad
This recipe is very healthy and is rich in protein and fibre.
Moong sprouts (yellow lentil) 1/2 cup
Red Chana sprouts ( Black Gram) 1/2 cup
Kabuli chana sprouts (Chick pea) 1/4 cup
Kidney beans sprouts 1/4 cup
Grated Cucumber 1
Grated Carrot 1
Tomatoes finely chopped 1
Capsicum finely chopped 1 small
Brocoli florets 1/2 cup
Lemon juice 1 tbsp
Olive oil 1 tbsp
Green chillies finely chopped 2
Salt to taste
Chat masala 1 tbsp
Finely chopped Coriander leaves 1/4 cup
Boil all the sprouts in water for 1-2 minutes.
Keep them in refrigerator and allow it to cool.
Blanch broccoli florets and cool it.
In a mixing boil take cooled sprouts and broccoli and add all other veggies and toss well.
In a small bowl take olive oil and add salt, chat masala, green chillies, lemon juice and mix well.
Pour dressing on the salad. Add coriander leaves and toss well. Your salad is ready to serve.
You can add veggies of your choice ;for eg:- potatoes, onions, sweet corn etc
