Mixed Vegetable Masala (mixed Vegetables Spicy Curry)

Mixed vegetables masala is a vegetarian side dish recipe. As the name suggest it involves various vegetables and the protein composition is enhanced by addition of Paneer. It is a easy to make recipe for the vegetarians and can be served with chappati or even pulao.

Mix Vegetables (carrot , beans, Capsicum) 100 grams (3.5 ounce)
Onion 2 piece
Green chillies 2 pieces
Paneer (cottage cheese) 100 grams (3.5 ounce)
Ginger garlic paste 2 tablespoon
Sabzi Masala powder 2 tablespoon
Gram masala powder ¼ tablespoon
Kasuri Methi (dried fenugreek leaves) ½ tablespoon
Nuts (Cashew and kismish) 1 tablespoon
Refined oil 4 tablespoon
First cut the mix vegetables , paneer and onion in 1 inch size.
Put the oil in a Karahi or Pan and put the Paneer. Saute the paneer for about a mintues and then take it out on a plate.
In the remaining oil add carrot and Beans and cook it in low flame. When the carrot and Beans are half done put capsicum, onion and green chillies and cook it with the lid on for 5-6 mintues.
Afterwards put the ginger garlic paste, sabzi masala powder, garam masala, kasuri methi and nuts and cook it for another 5 minutes. Mixed vegetable masala is ready. Serve it with Chappati.
