First make the sugar syrup and make sure the syrup reaches 220 degrees take it off the heat and keep aside to cool. Next start making the batter by sifting the gram flour and adding it in a bowl with slowly drizzling in the water, to make a pourable mixture making sure not to get it too runny but making sure it is not runny, add the melted ghee and the pinch of color and keep aside. Heat about 2 to 3 cups of oil drop a little mixture in the oil if it bubbles and surfaces to the top your oil is hot enough to fry the bundis. In a utensil that has tiny holes in it pour the mixture starting with a couple tablespoons and fry the bundi for about a minute, and remove and keep aside. Once all the bundis are done crush it in a food processor until it reaches your desired texture add the crushed almonds and pour it the melted ghee and sprinkle it with salt. Now start pouring in the sugar syrup slowly until it is moist enough to form a ball. Massage the mixture so it helps get the syrup in the bundis and start making small ladoos and keep aside for about 4 hours or even overnight.
