Motipak. (gramflour Sweet Cake).
It is a sweet dish recipe and is a new avatar of traditional Indian ‘ ladoo’. It is made from besan, and can be stored for a couple of month in the refrigerator.
Gramflour – 250 grams
Ghee – 200 grams
Sugar – 200 grams
Pista – 2 tablespoon
Kesar (Saffron) – few strands.
Take gramflour in a bowl and add 1 tablespoon of ghee. Add little water to make a thick paste. Check the consistency by dropping a drp of besan paste over a surface if water. It should float.
Make a chasni by boiling sugar with 2 cups of water
Heat ghee in a karahi. Take a strainer with large holes. Put small balls ( boondi) in the hot ghee.fry for a second and take out the fried boondi .
Pour the chasni over the fried boondi, add chopped pista & kesar and mix well. The sugar syrup should be soaked by the boondi.
Take a greased thali and pour the entire thing. Using a spatula press the boondi to foam a square cake. Refrigerate it for 30 minutes to set. Cut small squares and serve your motipak.
You can replace ghee with refined oil for a healthier option. However I suggest that you add a tablespoon of ghee while greasing the thali for motipak.
