Mughlai Egg Curry
My friends say, my mother makes the best Biryani in the world. Whenever they come to my house, they ask for Biryani. However, My favourite has been Egg curries cooked by my Mom. Here is one of my favourite dishes of mom
Boiled Eggs - 2
Onion -1 medium sized
Tomato - 1 medium sized
Whole red chilli - 1-2 pieces
Ginger and garlic paste - 1 tablespoon
Turmeric powder - 1/4 tablespoon
Garam masala powder - 1/4 tablespoon
Red chilli powder - 1/4 tablespoon
Fresh Cream - 1/2 cup
Butter- 4 tablespoon
Salt - to taste
Chopped coriander Leaves - 3-4 tablespoon
Peel the boiled eggs & cut them into half.
Chop onion & tomatoes finely & keep aside.
Heat butter in a pan on low flame.
Break the whole chilli into half and put in the butter. As it starts darkening, add the chopped onion and tomatoes. Cook them on low flame till they become soft.
Then add the ginger and garlic paste, turmeric powder, red chili powder & garam masala and continue to fry till the oil separates.
Finally add the cream and salt and mix. Add the eggs & let it simmer on low heat for 5-6 minutes.
Garnish with chopped coriander leaves & serve hot with chapatti or naan.
You can add little kasuri methi to get the royal taste
