Its Summer Time!!! Asked mom whats special can be made for summer. Yes its something made from JACKFRUIT....Mulika is the one which my mom makes every year for me.. Everyone will love this sweet snack that is something to munch on with your family and friends.This is made from ripe jackfruit and deep fried in oil..You are worried or concerned about deep fried goodies? no worries.. You can make this in appe pan/ paniyaram pan...but best served when deep fried...:) Always oil fried is tasty :P It can be a party dish and Kids love it.

Ingredients: 
Jackfruit Yellow sheaths(separated from seeds) : 2 cups
Fresh grated coconut : 1 cup
Semolina : 1 cup
Jaagery : As per taste(depends on how sweet jackfruit is)
Cashews : Few
Cardamom powder : 1 and half tablespoon
Salt a pinch
Directions: 
Take Jackfruit Yellow sheaths(separated from seeds) and fresh grated coconut in a mixer and grind it to a smooth paste.
To the above mixture add powdered jaggery and semolina. Better not to put jaggery in mixer since mixture will become little watery.So mash it using hands.
Add cardamom powder,cashew pieces, pinch of salt and mix well. Set this aside for 10 minutes.
Now keep oil for deep fry. Once oil gets hot pinch out small balls from the dough into oil and deep fry it until brown and dark in color.
Serve
Footnotes: 
We can even prepare it with rice (instead of semolina) but its relatively more laborious and can be too dependent on the quality of the rice and need to add more of fresh grated coconut to make it soft.
It has a shelf life of 3-4 days when stored at room temperature.
