Mutton curry is a nonvegetarian side dish recipe. However the recipe for mutton curry varies across India due to usage of different spices. Here is the very basic way of cooking it.
Mutton pieces 250 grams
Bay leaf 1 piece
Onion (chopped) 1 cup
Raw papaya Paste 1 cup
Ginger- garlic paste 2 tablespoon
Turmeric powder ½ tablespoon
Red chilli powder 1 tablespoon
Gotta garam masala 1 Cardamom,1 clove, ½ inch cinnamon, ½ inch mac and nutmeg.
Garam masala powder 1 tablespoon
Mustard oil 100 mililitre
Salt 1 tablespoon
Ghee 1 tablespoon
Heat mustard oil in a karahi and put gotta garam masala. Once it starts popping add onion and fry onion till they turn golden brown.
Afterwards add ginger garlic paste, turmeric powder and red chilli powder and sauté the masala for 1-2 mintues.
Add mutton and raw papaya paste. Saute for about 10 mintues.
Afterwards pour the entire thing in a pressure cooker, add salt, ghee,garam masala powder and about 1 and ½ cup of water and put the lid on. Cook up to 4 whistles.
Check if the mutton have become tender. Once done take it out from fire and serve hot with plain rice.
Raw papaya is added for quick tendering. One can replace it with curd if raw papaya is not available.
