1 cup instant Oats, powdered
1 cup fine Suji(Semolina)
1 cup Curd
Water to adjust consistency of batter
Salt to taste
1 teaspoon Eno fruit salt
½ teaspoon Red Chilli Powder
½ Teaspoon Mustard seeds
6-7 Curry leaves
1 tablespoon Oil
Mix Up all ingredients for cupcakes together, except the Eno and keep for soaking for 10 minutes.
Adjust Consistency like Idli batter. Keep the idli steamer ready.
Add Eno to the batter and mix quickly. Bubbles will appear. Put batter in cupcake moulds.
Put in the steamer on full gas for 10 minutes. Remove and let cool for 10 minutes as they will be soft.
Give tadka of Mustard and curry leaves. Serve with chutney.
