Olan(ash Gourd-red Beans Curry)

Sadya (Kerala style feast) is served for all special occasions in Kerala. A sadya cannot be complete without olan, which is a dish made of ash gourd and Red beans. This is not a common dish at my home, but me and my husband would love to have this dish with rice.

Ash gourd- 250g, cut into small cubes
Red beans (Vanpayar)- 1/4 cup
Green chillies- 4, sliced vertically
Thick coconut milk- 1/2 cup
Coconut oil- 2 tbsp
Salt- as needed
Curry leaves
Water- as needed
Pressure cook the red beans with 1.5 cups of water for 6- 7 whistles
Strain and keep the cooked beans aside.
In a hard bottomed vessel, cook together the ash gourd, green chillies along with salt and water till the ash gourd gets cooked well. The ash gourd should not be overcooked and should retain its shape.
Add the cooked beans, coconut milk and curry leaves to the ash gourd and mix well.
Cook on a low flame for 6-8 minutes. Please note that the curry does not become too thick since it may get thickened over the time.
Switch off the flame and remove from fire. Pour 2 tbsp of coconut oil to it.
Please note that the red beans should not be over cooked.
