2 medium size of (specific Bharta) Baingan Or Brinjal
2 medium size onion fianlly chopped
3-4 medium size tomatoes chopped
4-5 Garlic cloves chopped or grated
1/2inch ginger grated
4-5green chilli chopped..u can use less or more as per your spice level
5-6tbsp oil..(preference mustard oil)
2 tsp kashmiri red chilli ( more or less as per spice level
1 tsp garam masala
2 tsp coriander powder
1 tbsp coriander chopped
Salt as per taste..
1 tsp turmeric powder
Water if required
Preheat oven at 180'C and roast baingan for 35-40 minutes..till it becomes soft and roasting smell comes out.. take it out remove all skin from baingan and chopped or meshed it..
Heat oil a pan add cumin seeds add Ginger garlic chilli and onions and saute it till it becomes brown or raw smell goes..
Add tomatoes chopped and all spices and mix well..and Cook it till tomatoes become soft ..
Add roasted chopped baingan and mix well and cover it and Cook it till it leaves oil..or baingan absorbed all spices..adjust spices Now..
Add lemon juice and garnish it with chopped coriander..
Serve hot with rice naan or chapati..
Baingan ka Bharta is flavour awseom with mustard oil..so preferred to use mustard oil..it is little spicy so adjust spice level as per your taste..
