Pachakkari Biryani (kerala Style Vegetable Biryani)

Making a biryani at home is no more a big deal now. Just try this typical Kerala style Vegetable Biryani and you will be happy to cook this again. It is delicious, nutritious and spicy too. The flavours of masala and vegetables are well infused with the rice and hence this biryani tastes so good compared to other vegetarian rice recipes. Biryani rice - 1/2 cup
Carrot (chopped into small cubes) - 1
Potato (chopped into small cubes) - 1
Beans (chopped into small pieces) - 3
Ginger and garlic (Chopped into small pieces) - 1 tsp
Green chillies (chopped into small pieces) - 3
Turmeric powder- 1/2 tsp
Red chilli powder- 1 tsp
Coriander powder- 1/2 tsp
Black pepper powder-1/4 tsp
Garam masala powder- 1/2 tsp
Coconut oil - 2 tbsp
Water-3/4 cup
Salt- as needed
Fennel seeds- 1/4 tsp
Cinnamon stick- 1
Curry leaves- a bunch
Wash the rice and keep it aside
Heat 2 tbsp of oil in a pressure cooker. Add fennel seeds to it.
When the fennel seeds splutter, add cinnamon stick and sauté for one minute
Add the chopped vegetables, garlic, ginger, green chillies and curry leaves to it and sauté for 2 minutes
Next, add the red chilli powder, turmeric powder, coriander powder, black pepper powder and garam masala powder to it and sauté for 2 minutes in low flame
Add the rice and salt to it and pressure cook for two whistles
Open the pressure cooker after 7 minutes and serve your biryani with raita and pickle
You can use any vegetables such as green peas, cauliflower or mushroom in this recipe
