Palak Chicken Soup (healthy Spinach Chicken Soup)

The first time, I had this awesome soup was in a shanty (small food outlet) besides Hindu Hostel of Presidency College in Kolkata. Since then I became a regular visitor there. Even now whenever I go to Kolkata I make it a point to have spinach chicken soup.

Palak (Spinach) - 1 cup
Chicken - 200 grams
Cashew paste - 1 tablespoon
Ginger- 1/2 inch grated
Cloves -2 pieces
Cardamom- 2 pieces
Cinnamon - 1/2 inch stick
Onion - 1 small
Salt - as per your taste
Butter - 2 tablespoon
Corn flour - 1 tablespoon dissolved in water
Chop the palak finely and keep aside.
Take a pressure cooker and heat 1 tablespoon of butter.
Add cinnamon, cloves, cardamom along with chopped onions and sauté for few seconds.
Now add the chicken pieces, cashew paste, required salt and 1 and 1/2 cup of water. Mix and cover the lid. Cook up to 3-4 whistles.
Open the lid and take out the chicken pieces. Strain the water and pour the stock in a thick bottom pan. Now add the chicken into the stock and add the chopped spinach and corn flour.
Switch on the gas and let it boil for 5-7 minutes.
Add the remaining butter and check the seasoning.
Serve hot.
Use fresh spinach.
Sprinkle some freshly ground black pepper to enhance the taste.
