Palak Ki Roti (spinach Flavoured Indian Flat Bread)

My mother always ensures that we have our breakfast before leaving the house for school. She believes, Breakfast is the most important meal and it should be wholesome. Even if we have to leave house at 7 am in the morning, She gets up at 6 and prepares our breakfast. I like her stuffed parathas and different flavoured chppatis which do not require any side dish . Palak ki roti is one of the easiest, flavorful and wholesome option.

Very Easy

Atta (Wholewheat flour) - 1 cup
Besan (Gramflour) - 1/4 cup
Makki ka atta Maize flour) - 1/4 cup
Garlic pods - 2-3 ( chopped)
Spinach leaves - 1/2 bowl cleaned and chopped)
Ajwain ( Carom seeds) - 1 tablespoon
Kala jeera ( Onion Seeds) - 1/2 tablespoon
Hing ( Asafoetida) - a pinch
Salt - To Taste
Ghee - 4 tablspoon
Water - for dough
Combine atta, Besan and makki ka atta in a bowl.
Add chopped garlic, spinach leaves, ajwain, kala jeera, hing and salt and mix.
Now add required water and make a tight dough. Remember the spinach has its own water and you have added salt, so it will release some water.
Let the dough rest for 5 mintues.
Now take a handful portion of the dough and roll it like chappati.
Heat a tawa and cook the Palak ki rotti on medium flame till both sides are done and small brown patches appear on the surface.
Apply a little ghee and serve hot with any side dish.
You can add some chopped onions to enhance the taste.
