Palak Paneer (cottage Cheese In Spinach Gravy)

Palak Paneer is a dish of North Indian origin consisting of palak (spinach) and paneer (cottage cheese) in a thick curry sauce based on pureed spinach with garlic and garam masala.

Spinach leaves(washed) -250gm
Paneer(cubes) -200gm
Green chilli -3
Chopped ginger -1 inch
Garlic Cloves(Peeled) -14to16
Chopped onion -1 (large)
Chopped tomato -1
Cumin seeds -1/2 tsp
Turmeric powder -1/2tsp
Red Chilli Powder -1/2tsp
Cumin Powder - 1/2tsp
Garam Masala Powder -1/2tsp
Cooking oil -4tbsp
Cashew Nuts -1tbsp (optional)
Kasuri methi (optional)
Coriander Leaves
Salt to taste
ghee or batter
Boil one litre of water in pan .Add spinach leaves & Boil it for a minute , turn off the flame. Drain the water ,take out the boiled spinach in a blending jar & keep it aside for a cool. Heat oil in a pan , add cumin seeds , fry it for few seconds then add green chilli, ginger, garlic. Add onions & fry it on medium flame. Till it turns light brown(2-3 min). Add chopped tomato,cook on medium flame till it turns little soft (2-3 min) Turn off the flame & let it cool down , take out the fried ingridients in the same blender jar. Add little water & blend it into thick smooth paste , keep aside. Heat ghee or butter in a pan & fry paneer . Still golden brown in color & take out in a bowl. In same pan heat ghee or butter & fry cashews Still golden brown in color & take out in bowl & leave it for cool. Take out fried cashew to blend in the same blender. Bleand it like powder Heat oil in same pan , add turmeric powder,red chilli powder, coriander powder & cumin powder Fry it for 20-30 seconds , add the prepared paste Keep stirring cover the pan & cook it for 2-3 min on medium flame Add fresh cream & paneer cubes , mix it well in gravy Add garam masala powder & salt to taste Add cashew powder & kasuri methi powder Mix well Cover the pan & cook it for 2 min on low flame , Turn off the flame Garnish with fresh cream & grated paneer Serve hot With roti , paratha, naan, & kulcha
the paneer cubes can also be lightly fried & then added to the curry .In this case,you don't need to cook the paneer in the gravy as when frying they are already cooked.
