Panni Ularthiyathu (pork Fry Kerala Style)

As Syrian Christians from the Trichur side every celebration or feast of ours is incomplete without this special pork fry. I firmly believe pork is addictive in any form. I love this meat and it's a pleasure to join one's family on occasions to cook in one's backyard.This time we gathered for my aunt's 25th wedding anniversary and it was a pleasure cooking with the elders in the family. Here's our family recipe for pork fry.

Teena Augustine's Secret Indian Recipe !

Pork- 1 kg
Turmeric powder- 1 tsp
Chili powder- 2 tsp
Pepper powder- 3 tsp
Garam masala- 2 tsp
Coconut oil- 3 tbsp
Salt- to taste
Ginger- 2 inch long piece
Curry leaves- lots
Shallots- 1/4 cup
Green chilies- 6
Clean and cube the pork. Cook the pork with salt, turmeric, ginger, green chilies and curry leaves in a pressure cooker with 1/4 cup of water.
When you cook the meat this way a lot of fat will come to the top of your vessel. You can scoop this fat off and prepare the meat for the stir fry.
Cook the meat in a pressure cooker up to 3 whistles. If the meat is still tough cook it a bit further.
Now in a wide bottom pan heat some oil and saute the minced garlic and shallots. Once they brown add the meat followed by chili, garam masala and pepper powder.
Stir the pork till it is evenly cooked in the spices and is dry.
When the pork is well cooked and dry its ready to be served.
Add sliced coconut strips if you love coconut. These strips will absorb the fat and taste great too.
