Pavakka Varuthathu (bitter Gourd Fry)

This is a delicious Indian recipe served as side dish. Bitter gourd has a lot of medicinal properties. I love this fry very much. It is a recipe that requires less effort but has wonderful taste.

Ingredients: 
Bitter gourd -(cut into thin pieces) -1cup
Onion (sliced) -1
Garlic - 2or 3 cloves
Red chilli powder-1 tsp
Turmeric powder-1/4 tsp
Rice Powder -1/2 tsp
Besan powder (gram flour) -2 tsp
Salt - to taste
Asafoetida - 1/2tsp
Coconut oil for deep frying - 1/2 litre
Curry leaves- 5- 6 leaves
Directions: 
Clean and remove seeds from bitter gourd.
Then cut into thin round pieces.
In a bowl add bitter gourd, onion, red chilli powder, turmeric powder, rice powder, asafoetida, gram flour, salt, garlic and curry leaves mix well properly. Keep it for 1/2 hour.
Now deep fry this bitter gourd pieces in coconut oil.
Serve it hot with rice.
Footnotes: 
To reduce the bitterness, after slicing them marinate them with enough salt.
