It is a rich Punjabi sweet delicacy savoured by all and a favourite of everyone.
Rice - 1 cup (soaked minimum 1 hour)
Milk - 2 ltr
Sugar - 2 big tbsp or as sweet as you want
Almonds - 1/2 cup cut lenghtwise
Green Cardamon - 4-5 pods
Soak the rice for minimum 1 hour and strain the water, in a small mixer put the rice, cardamon seeds and little milk and grind into a paste.
In a vessel add strained milk , heat it till boiling point, then simmer for 10 mins. Add sugar according to taste and stir well . make sure no layer of cream should be formed over the milk, then add the rice paste and stir constantly without leaving the spoon so that no lumps are formed.
Let it cool little and then transfer the Phirni in the dish you want to serve or you can use small earthen pots, called as 'Kullad' in punjabi. and garnish with almonds. Then keep it in the fridge and serve chilled .
For better taste we can put a little roohafza for decoration.
