Pineapple & Semolina Halwa

I gave a twist to semolina halwa by adding pineapple to it. It enhances the flavour and healthy too.

Semolina – ½ Cup
Ghee – ½ Cup
Sugar – ½ Cup
Pineapple – ½ Cup (Chopped)
Raisins – 5 to 7
Pistachios – 5 to 7 (sliced)
Cashews – 8 to 10 (sliced)
Water – Around 1 ½ Cups
Green Cardamom Powder – ½ tsp
Saffron – few strands (dipped in 1 tbsp warm water)
Heat ghee in kadhai and add semolina. Cook and stir continuously till it turns golden brown.
Add chopped pineapple. Mix well. Cover it with the lid and let it cook for 2-3 mins.
Now add water and saffron water. Mix it and again cover it with the lid and cook for 2-3 mins.
Add sugar and mix. Stir continuously till the moisture evaporates.
Add green cardamom powder, raisins and mix well.
Garnish with the sliced cashews and pistachios. Serve hot.
