Pumpkin Pudding #steamedrecipe
Pumpkin Paste - 1 cup
Rice flour - 1 cup
Melted Jaggery- 3/4 cup
Cardamom powder - 1/2 tsp
Ghee - 3 tbsp
Remove pumpkin skin and cut it into cubes, put this in small vessel with little water (1/2 cup) and boil it.
Once pumpkin is cooked strain the water (dont throw away the water). Now smash it into fine paste and let it cool.
Add some water in jaggery and melt it, once done strain it to remove any impurity, take half cup else as much as you prefer.
Rice powder and pumpkin paste should be taken equal quantity and all the ingredients should be in room temperature.
First mix pumpkin and rice powder well and then add jaggery and cardamom powder. Consistency should be of cake batter, if its hard pls add the pumpkin water (which we had kept aside). Mix well to form smooth paste/batter.
Now coat a cake tin/baking tray with ghee and pour the batter, steam it for 25-30 min or till its done.
Cool it for min 2 hrs and then de-mold it....pumpkin pudding is ready.
It can be served with rabdi or ice-cream also.
